Liptauer is a traditional appetizer spread enjoyed in Austria, Hungary, and Slovakia. The name comes from the Liptov region in Slovakia. Originally made with Bryndza, a soft sheep’s milk cheese, this spread has seen many adaptations across Europe using various soft cheeses.
In the classic preparation, the soft Bryndza is blended with butter to achieve a creamy, fluffy consistency. For our version, we use quark cheese and heavy cream to create a rich and decadent spread. The Whip Whipped Cream Dispenser adds air to the mixture, resulting in a light and fluffy texture that you’ll fall in love with.
Common seasonings include paprika, capers, anchovies, tomatoes, and minced onion. The ideal flavor profile is smoky, tangy, and slightly salty. You can refrigerate Liptauer espuma for several days, making it a perfect treat to satisfy your cravings anytime.

Traditional quark is made without rennet, although some commercial varieties may contain it. Its texture is similar to that of Greek yogurt, and it’s considered a healthy option due to its low sodium and high protein content. Besides Liptauer, quark is also used in many desserts, including cheesecakes, and is readily available at European specialty markets or online.
How Is Bryndza Made? Bryndza, a typical sheep milk cheese, is made from a mixture of 50% or more sheep milk. Its soft texture resembles that of feta cheese.
