Ingredients:

  • 1 cup fresh cranberries
  • 1/2 cup orange juice
  • 1/4 cup sugar
  • Zest of 1 orange
  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup Greek yogurt

Steps:

  1. Prepare the Compote: In a small saucepan, combine cranberries, sugar, orange zest and juice, and 2 tablespoons of water. Bring to a boil over medium heat. Stirring often, boil until the cranberries burst and the mixture thickens, about 8 to 9 minutes. Allow to cool at room temperature for 1 hour, then cover and chill for at least 4 hours or overnight.
  2. Prepare the Topping: Using an electric mixer on medium speed, beat the softened cream cheese and sour cream until smooth, about 1 minute. Add sugar, lemon zest and juice, and orange zest; continue to beat until light and fluffy, about 2 minutes, stopping to scrape down the sides as needed.
  3. Assemble the Parfaits: Spoon about 4.5 tablespoons of cookie crumbs into each of 6 (1-cup) glasses or ramekins. Top each with approximately 1/3 cup of the Lemon Topping. Cover and chill until ready to serve. Just before serving, uncover and add about 2 tablespoons of the chilled Compote on top of each glass.
